The TOKYU HOTELS Cooking Contest is held every year at TOKYU HOTELS.
The 23rd annual award-winning dish, "Roast Pork Piccata Style," will be served at 35 participating hotels across the country.

Piccata is a dish that originated in Florence, Italy. It is a dish of roast pork coated on one side with cheese and egg and baked until fragrant. The lemon-flavored sauce and salad mixed with pickled vegetables complement the sourness, creating a refreshing taste perfect for early summer.
They also focus on well-being, using high-quality oils such as perilla oil and Olive oil, as well as quinoa, which is known as a superfood.

The theme ingredient this time is "roast pork"
The TOKYU HOTELS Cooking Contest is held every year with the aim of nurturing young chefs and improving their skills. The theme for this year's contest, the 23rd, was "roast pork," and the participants were tasked with creating a garnish, sauce, and cooking method that would utilize the ingredient, and developing a main dish that could be sold at hotels across the country.
35 hotels from across the country participated, with eight hotels that had made it through the preliminary rounds competing in the finals.

The Grand Prize winner will be selected from 35 hotels nationwide.
As a result of the judging, the grand prize was awarded to Ogata Yoshiyuki CERULEAN TOWER TOKYU HOTEL.
When asked why he chose the piccata technique for the theme ingredient "roast pork," he explained, "It's a cooking method that can be easily served at any hotel, while preserving the meat quality, eliminating waste, and shortening cooking time." In his acceptance speech, he said, "I thought first and foremost about the guests who would be eating the dish, and cooked it as if I was serving it to my precious family."
