    Les 8 Tresors

A beautiful assortment of eight delicately colored appetizers.
Enjoy this dish with a variety of flavors, featuring Japanese-inspired ingredients such as karasumi (cured mullet roe), kumquats, lily bulbs, and yuzu citrus.

    • Sea bream carpaccio with bottarga powder

    • Free-range chicken rillettes

    • Scallop blancmange

    • Seared Tuna with Nozawana and Olive Conditioning

    • Kumquat and mozzarella caprese

    • Consommé soup and lily bulb

    • Snow crab and turnip with yuzu aroma

    • Tokyo Beef Prosciutto

Pan-fried cod milt with cauliflower puree and ravigote

A rich cauliflower puree is topped with pan-seared cod roe, creating a light and airy texture on the outside and a soft, melt-in-your-mouth interior. The gentle flavor of butter is layered with sun-dried tomatoes and finished with a tangy ravigote sauce for a complex and nuanced taste.

Pan-fried spiny lobster and Japanese lobster
Stracciatella cheese and Café de Paris butter

This dish features two premium Japanese ingredients: spiny lobster and lobster, known for its luxurious flavor. Both are pan-fried to perfection and paired with stracciatella cheese (a rich cheese made only from the soft inner part of burrata cheese). An Americaine sauce infused with seafood broth and a tomato sauce gently envelop the entire dish. A touch of café de Paris butter, pancetta, and basil oil are added as accents, creating a festive red dish perfect for Christmas.

Roasted domestic beef loin with Madeira sauce and foie gras.

For the main course, a dish to celebrate a festive Christmas night, we have prepared a roasted domestic beef loin that boasts a tender texture and a rich, savory flavor that spreads throughout your mouth with every bite. This is accompanied by a colorful garnish of romanesco, Brussels sprouts, mushroom duxelles, red radish, and foie gras, creating a vibrant, wintery scene.

    Praline Parfait

To complete the course, we offer a dessert shaped like a Christmas tree: a "Praline Parfait." Made with a blend of various nuts including almonds, pistachios, and hazelnuts, the praline boasts a subtle nutty aroma and elegant sweetness, melting gently in your mouth with its smooth texture. At first glance, it resembles a Christmas tree, but when viewed from above, the surrounding area also resembles a red wreath, showcasing the chef's playful spirit as the dish changes its appearance depending on the angle. Enjoy it while imagining a Christmas scene.

    Stollen
    Vanilla Kipferl

To conclude the course, we have prepared two traditional sweets that celebrate this time of year.
First, there's Stollen, a traditional German pastry. This pastry is appealing for its gentle buttery flavor and the accent of dried fruit. Next, there's Vanilla Kipferl, a pastry that has been enjoyed in Germany and Austria as winter approaches. It's shaped like a crescent moon and is known by the name "Kipferl" (which means crescent moon in German). It's a classic pastry that melts in your mouth with a delicate texture.
