Nagaimo, grown in the fertile volcanic ash soil of Nagano, is characterized by its strong stickiness and elegant sweetness. Tororo soup with dashi stock has a nostalgic taste that will warm your heart. Enjoy it over Shinshu soba noodles or warm rice.
A luxurious curry where the rich flavor of slowly simmered meat blends perfectly with the sweetness of vegetables. The mild taste and aroma of spices will whet your appetite.
A sweet bread with a gentle sweetness, a rectangular bread filled with white cream that was born about 60 years ago in Ina City. Since its inception, it has spread throughout the Nagano and is sold at many bakeries and supermarkets throughout the prefecture. Nowadays, it is a Nagano soul food that is very popular.
This bread from Hakuba Village's "Gentaro Bakery" uses the clear water from "Gentaro Spring," one of the three springs in Hakuba (along with Futamata Spring and Gentaro Spring), Okinawan Shimamaasu salt, and island sugar from Amami. The bread yeast is made using various methods, from cultivating yeast from seasonal fruits to using commercially available yeast. It is a fluffy, soft, and delicious bread made without using any yeast food or dough improvers.
