Neo Bistro Course

Sea bream kelp-cured sheet
Brandard and Ravigote

This is an adaptation of brandade, a local dish from southern France, made with sea bream.
Enjoy a layer of sea bream marinated in kelp with a ravigote sauce that has a tangy red wine vinegar flavor. Finished with a sprinkling of colorful edible flowers, this dish is reminiscent of fireworks.
