Foie gras terrine with mixed berries and grapes
As a gorgeous appetizer reminiscent of dessert,
We offer a rich foie gras terrine.
Cream cheese with blueberries, caramel,
Grape jelly is used as an accent.
By combining it with terrine,
You can enjoy different flavors with every bite.
Celery and green apple soup
Rosé Ecuume Snow Globe
A white soup based on celery and green apples,
Add gorgonzola cheese and finish with black pepper
Rosemary oil powder is added to enhance the fragrance.
Rose water adds a subtle sweetness and color.
Made with cranberry juice
Finished with a pink écuim floating on top.
Monkfish confit and two kinds of fried roulo
Sauternes aroma
Monkfish is served in two different cooking methods.
In his left hand he has fried fragrant kadaif.
In his right hand he holds monkfish wrapped in pancetta and prepared as confit.
Sauternes wine with a sweet aroma and green onions
It is served with a sauce that adds a vibrant green to the dish thanks to the green of the chrysanthemum.
Braised Wagyu beef with Madeira flavor
With Legume Tourte
The main dish of the Christmas course is
A stew of Japanese Black beef with concentrated umami.
The sweet and sour sauce brings out the natural flavor of the Wagyu beef.
Garnish with champignons,
Pickles (beets and cornichons),
Mimolette cheese, potato puree, duxelles,
We have prepared a fragrant tourte layered with spinach.
Enjoy the gorgeous cross-section and the overlapping flavors.
Strawberry and coconut mousse with lime flavor
The scent of coconut spreads over the strawberry sauce.
Coconut mousse is layered on top of each other.
Lime-flavored ganache and strawberry jelly are hidden inside.
A refreshing acidity can be felt in the sweetness
It is made to have a delicate taste.
To finish, sprinkle white chocolate like snow.
Served with chocolates shaped like snowflakes,
