Gansu

"Gansu" is a fried kamaboko (fish cake) that was created as an everyday food ingredient (fish paste) by a kamaboko shop in Hiromachi, Kure City (southern Hiroshima) in the early Showa period. It has a crispy outside and a juicy inside, and is characterized by the sweetness of the chili peppers and the combination of onions and minced fish.

Hiroshima Cooked rice

Cooked rice is a rich flavor and is made with plenty of "shirasu", which is known as a specialty of the Hiroshima. The flavors of shimeji and fried tofu are also mixed, and the warm and gentle taste makes you feel happy from the morning.

Roasted chicken with oyster soy sauce

Chicken thigh meat is marinated in dashi soy sauce that allows you to enjoy the rich umami, flavor, and aroma of oysters, and then grilled until juicy. It goes perfectly with white rice, making it a dish you'll want to have seconds of again and again.

Cold tofu made with whitebait from Hiroshima

Hiya-yakko topped with fresh whitebait from Hiroshima is refreshing even on mornings when you don't have much of an appetite.
