"Dago" means "dumplings" in the Kumamoto dialect, and is also called dango soup. It is one of the representative local dishes of Kumamoto and often appears in school lunches. It is packed with vegetables and chicken stock, making it very nutritious. It is eaten with dango, which has a smooth texture.

Takana rice

One of Kumamoto's representative local dishes. Finely chopped pickled mustard greens are stir-fried and mixed with rice. The seasoning is kept simple, allowing the perfect balance of saltiness, sourness, and rich flavor of the pickled mustard greens to shine through. Please enjoy this carefully crafted dish.

Braised horse tendon

Horse tendon meat is stewed in a sweet and spicy sauce using Kumamoto's local sake "Akazake." The addition of Akazake gives the horse meat a rich and deep flavor, resulting in a tender finish. The soft and creamy texture is addictive, making this a great dish to have with rice.

Dashi rolled egg
