BROOKLIN KURA Occidental/Grand Prairie/Catskill
(From left in the photo)
Occidental
This challenging sake is made using traditional methods and then dry-hopped for a short period of time. The addition of hops adds a vibrant aroma and a unique, soft pink color.
The name "OCCIDENTAL" means "Western" and expresses a uniquely American perspective on craft sake. It has a smooth, velvety mouthfeel and a light honeyed finish with a citrus peel finish.
Grand Prairie
This sake is named after Grand Prairie, the land where Yamada Nishiki rice was first cultivated in America. It is made using 100% Yamada Nishiki sake-grade rice from Arkansas, and by maintaining a low fermentation temperature, it achieves the dry and light taste of a ginjo sake. This unique sake boasts sweet aromas of honeydew melon and green apple, as well as a subtle aftertaste of star anise.
Catskill
This sake is made with 100% Yamada Nishiki rice, a rice variety ideal for sake brewing, grown in Arkansas. Fermentation at temperatures below 11°C produces a delicate and luxurious sake. This sake is named after the Catskill Mountains, the source of the high-quality soft water Brooklyn Kura uses in all of its sake brewing. It offers a delicate, clean, and deep flavor, showcasing tropical fruit and delicate citrus notes, along with a hint of vanilla. The acidity is well-balanced, resulting in a smooth, creamy finish.
