In Matsue City, "Tea Ceremony Day" has been established to commemorate the death anniversary of Matsudaira Harusato (Fumai-ko), the seventh lord of the Matsue Domain and a well-known tea master.
Matsue is a city where the tea ceremony culture nurtured by Lord Fumai still thrives. Along with seasonal Japanese sweets from long-established shops that carry on this tradition, we have incorporated the meltingly sweet flavor of mango not only into sweets but also into savory dishes, beautifully expressing the arrival of early summer.
Furthermore, we've incorporated not only mangoes, but also fragrant melons and burstingly sweet Delaware grapes—a generous amount of other fresh summer fruits.

The "Crème Brûlée French Toast with Vanilla Ice Cream and Mango," adorned with meltingly sweet mango, is the signature dish of this project.
Enjoy the contrast between warmth and coldness as the French toast, crispy on the outside and soft and fluffy on the inside, is paired with chilled vanilla ice cream and the fruity taste of mango.

The smooth mango mousse is layered with the tart crust, and with each bite, the rich sweetness and refreshing fruitiness fill your mouth.

◆A little bit of seasonal flavors, a delightful savory experience
For the savory dishes, we've incorporated seasonal flavors such as salmon from Sakaiminato, which is in season right now, sweetfish, a symbol of summer, and sweet corn.
In particular, Sakaiminato salmon is raised in the bountiful waters of Miho Bay and is immediately killed after being landed, resulting in less fishy odor and a good balance of fat and firm texture.
Blending Japanese and Western elements, we carefully craft our products to embody the refined flavors found in the tea ceremony culture.

We also offer seasonal wagashi (traditional Japanese sweets) sourced from a long-established confectionery shop in Matsue.
In June, you can enjoy a product from Saiundo, and in July, a product from Saneido.
Held to coincide with "Japanese Confectionery Day" on June 16th, this event offers an opportunity to experience Matsue's unique Japanese confectionery culture.
