Osaka-produced Delicious Delights Dinner Fair
We have prepared three types of wine from Katashimo Winery in Kashiwara City, Osaka, and three types of pasta made with ingredients from Osaka.
We offer recommended pairings that bring out the unique characteristics of each ingredient, allowing you to enjoy the harmonious blend of wine and food.

Katashimo Winery
Osaka Katashima Winery, located in Kashiwara City, is the oldest existing winery in western Japan. In the early Meiji period, they reclaimed the Katashimo area of the Osaka Plain, which was ideal for grape cultivation, and have been producing wine since the first year of Taisho. While cherishing the passion and tradition for "high-quality winemaking" passed down since its founding, they continue to refine themselves daily and make wines that make the most of Osaka's natural environment.
What is "Osaka-made"?
Osaka products (mon) refer to agricultural products, livestock products, forest products, and marine products cultivated and produced in the Osaka region, along with processed foods made from these ingredients. At this fair, ingredients such as "Naniwa Black Beef," "Yoroshii Mushroom," "Ryuo Miso," and "Inunaki Pork" will be used.

Takoshan (sparkling wine)
Born from the concept of "a champagne that pairs well with takoyaki," this sparkling wine is a flagship product of Katashimo Winery. It features fine bubbles produced by bottle fermentation, a refreshing aroma reminiscent of white flowers, and a moderate richness. Its versatile flavor makes it a perfect match not only for takoyaki but also for a wide range of other dishes.

King Selby Kashiwara Brewery White Wine (Dry)
This dry white wine is a blend of Chardonnay and Koshu grapes, lightly aged in oak barrels. It showcases the unique qualities of both the imported Chardonnay and the native Japanese Koshu grape. The elegant aroma of Chardonnay harmonizes with the soft flavor of Koshu, resulting in a clean and refreshing taste. It pairs well with pasta, vegetable dishes, and other foods, enhancing the overall flavor.

King Selby Kashiwara Brewery Red Wine (Dry)
This dry red wine is a blend primarily of Merlot and Muscat Bailey A, lightly aged in oak barrels. It features a smooth mouthfeel, rich fruitiness, and a harmonious balance of maturity, resulting in a complex and nuanced flavor. It pairs well with meat dishes and those using fermented condiments, enhancing the savory flavors of the food.

Fresh Pasta Vegetable Ramen ~Osaka Kaleidoscope~
3,000 yen (pasta only)
This piping hot, aromatic soup is made with a miso-based sauce (kaeshi) using "Ryuo Miso" from Osaka, combined with a broth (dashi) made from fine mushrooms and several kinds of vegetables. Freshly boiled pasta and ingredients such as soy meat are combined with colorful root vegetables, creating a vibrant bowl reminiscent of the Osaka kaleidoscope. It's a new kind of fresh pasta ramen that fuses Japanese and Western flavors. *Vegetarian options available (contains eggs)

Pumpkin Carbonara ~with Inunaki Pork Pancetta and Nose Ohan Eggs~

Tagliatelle pasta coated in a creamy sauce made with the rich flavor of Osaka-produced "Inunaki Pork" pancetta and the smooth sweetness of pumpkin is served in a palm-sized mini pumpkin bowl. To top it off, it's combined with a mousse-like carbonara sauce made with Nose Ohan eggs, Parmigiano-Reggiano cheese, and pancetta oil, creating a new style of carbonara.

Naniwa Black Beef Bolognese with Freshly Shaved Truffles and Burrata Cheese

This dish features a meat sauce made with "Naniwa Kurogyu," the only purebred Japanese Black beef from Osaka, known for its tender texture and light fat, served with butterfly-shaped farfalle pasta. Burrata cheese, with its buttery flavor and mellow sweetness, is layered on top, and the aroma of freshly grated truffles completes the dish.
