Toshinori Sogabe
TOKYU HOTELS Executive Chef and THE CAPITOL HOTEL TOKYU Executive Chef. At the age of 26, he moved to France to study French cuisine in earnest. After returning to Japan, he joined NAGOYA TOKYU HOTEL. In 2001, he became the chef of CERULEAN TOWER TOKYU HOTEL "Coucagno", and in 2007, he won one star in "Michelin Tokyo '08". In 2008, he became the executive chef of THE YOKOHAMA BAY HOTEL TOKYU, and since 2017, he has also served as the deputy general manager. He has been the Executive Chef of THE CAPITOL HOTEL TOKYU since April 2019 and has been in his current position since July 2025.
History
The hill of Hie Shrine, where "The Capitol Hotel Tokyu" is located, has been called "Star Hill" since ancient times as a scenic spot with beautiful stargazing. From the end of the Taisho era to the beginning of the Showa era, the rare gourmet Kitaoji Rosanjin presided over the members-only restaurant "Hoshigaoka Saryo", and it flourished as a place for many politicians and business leaders to socialize.
