Japanese Cuisine SAKURAGAOKA Chef Kei Tsuruta and Joji Kanno, who manages the Ryotei Cerulean Tower Sukiya, create classic Japanese cuisine by two hands. Packed with seafood and mountain delicacies, it expresses the vibrant New Year's celebration the moment the lid is opened.

・Sea bream marinated in fragrant vinegar with sudachi citrus
We marinated sea bream in black vinegar for a refreshing finish. The aroma of bamboo leaves adds a delightful touch to this dish.
・Braised tiger prawns
These beautiful red and white prawns are lightly seasoned in a mild broth flavored with ginger.
Sunrise Salmon
Smoked salmon is wrapped in pickled daikon radish, resembling a sunrise.
We pray to the "New Year's God," who arrives with the first sunrise of the year, for a bountiful harvest and happiness throughout the year.
Herring and kelp roll
Herring is considered a lucky charm because the Japanese word for "herring" (nishin) sounds similar to "two parents" (nishin), symbolizing the wish for prosperity of descendants.
It's wrapped in kelp and simmered in brown sugar to bring out its rich flavor.
Black bean pine needles
This auspicious treat combines pine, a symbol of longevity, with softly simmered black beans.
The name embodies the wish that one will work diligently and earnestly, to the point of becoming tanned dark from the sun.
Red and white kamaboko (fish cake)
The semi-circular shape is reminiscent of the first sunrise of the year, and the red color symbolizes "warding off evil" while the white color symbolizes "purity," making it a lucky charm.

Eel rolled in egg
This is a rolled omelet with grilled eel inside. The yellow color of the omelet is associated with gold, making it a lucky charm for increasing wealth.
Grilled Japanese flying fish marinated in Saikyo miso
We marinated the highly prized skipjack tuna in miso with amazake (sweet rice wine) and then grilled it.
Grilled hairtail fish
The hairtail fish is braided and then grilled in a yuzu-flavored sauce. Its long shape evokes the idea of "long life," making it an auspicious ingredient that is indispensable for the New Year.

We cooked sea bream roe with ginger.

Conger eel narutomaki
The conger eel is rolled into a Naruto-style shape and simmered until tender. The Naruto style is considered auspicious because its pattern resembles a "noshi" (a decorative paper wrapping used for wrapping gifts).
・Softly simmered octopus
Octopus is considered a lucky food due to the wordplay between "octopus" (tako) and "many blessings" (tako), and is an essential ingredient in Osechi (Japanese New Year's food). We have taken our time to prepare it so that it is tender.
Purple sweet potato and chestnut paste
The vibrant contrast of purple and gold makes this kinton a gorgeous dish. It's a classic Osechi dish believed to bring wealth and good fortune.
Salted salmon roe
It is a symbol of prosperity and fertility, embodying the wish for many children.

This delicacy, made by pickling mullet roe in shochu and then drying it, is presented in a gold checkered package.

From "szechwan restaurant Chen," part of the Sichuan Restaurant Group led by Kentaro Chen, we present Chinese cuisine featuring Sichuan cuisine techniques by head chef Kazutoyo Inoue, who won the grand prize at "RED U-35," Japan's largest competition for discovering young talent.

We generously used spiny lobster and cooked it with our homemade XO sauce, which is full of the delicious flavor of seafood.

Yellowtail fried at high temperature is then seasoned with several spices, including star anise and cinnamon, to create a dish similar to sweet simmered yellowtail.

We used Jasmine tea leaves to create a fragrant smoked duck loin, which was then cooked to a moist and juicy perfection.
Tianfu Beef - Salt-cured beef shank with Sichuan peppercorns
This beef dish, made with carefully rubbed Sichuan peppercorns and rock salt, is a specialty of Sichuan, the land of abundance.
*The Land of Abundance = A region with fertile land and abundant resources. In China, this generally refers to Sichuan Province.

Shaoxing Wine Pickled Herring Roe
It is also provided by the Ministry of Foreign Affairs in Beijing, as well as by Chinese embassies and consulates in more than 200 countries.
We paired the Shaoxing wine "Guyue Longshan Chennian 8-Year-Old" with the delightful texture of herring roe.
Sichuan pepper and dried sardines with sansho pepper
We used plenty of sansho pepper from Wakayama to simmer dried sardines in a sweet and savory sauce.
・Red and White Old Dango - Sichuan Pickles of Radish and Carrots
The pickled radish and carrots were decorated with a knife ornament in the shape of "Jikkei," which in China symbolizes celebration.
・Ryuuou Gigai ~Scallops simmered in a secret Lu Shui (braised water) sauce~
Using several kinds of spices such as dried tangerine peel (chenpi) and cloves (choko, also called chozi),
These scallops are simmered to a glossy finish in a secret broth, "Lu Shui," which has been continuously replenished year after year. The aroma of sesame oil makes this a truly appetizing dish.
■ Fourth Tier ■ Sweets
The shop features sweets meticulously prepared by Tokuaki Misawa, who oversees the confectionery and bread-making departments, and Takuya Isoya, who was trained by a renowned pastry chef, including "Galette des Rois," a traditional French New Year's treat.

This is a traditional French chocolate confection shaped like a nutmeg.

Galette des Rois
This traditional French pastry is an essential part of New Year's gatherings, and it's customary to cut and share it with family and friends.
In France, where it originates, a small ceramic toy called a "fève" is placed inside.
The person who finds the "fève" (a small figurine) in their slice becomes the "king (or queen)" and is said to have good fortune for a year.
The "fève" (bean) will be provided separately, so please hide it inside before eating to enjoy the treat.
・Amber candy (plum wine and large red bean/cherry blossom)
A charming Japanese confection made by simmering granulated sugar with agar-agar. The subtle flavors of plum wine and cherry blossom spread gently in your mouth.

Comté
It began to be produced in the Jura Mountains region of France for the purpose of long-term preservation to survive the extremely harsh winters with deep snow.
Fromage is made from milk.
Because it contains less moisture, the flavor is concentrated, resulting in a rich and intense taste and body.
・Mimolette
An orange-colored cheese originating from the Flanders region of northern France.
It's a hard type with a satisfying chewiness, and as it ages, its flavor intensifies to the point where it's sometimes compared to bottarga.
We recommend pairing it with sake.
Brie de Meaux
This white mold cheese originated in the Brie region of France. It is characterized by its mild flavor and less pronounced odor, making it easy to eat.
■ Fifth Strength ■
Traditionally, Osechi (New Year's food) is served in five tiers, with the fifth tier being considered the place where good fortune is packed. In this premium five-tiered Osechi, we have combined one gift from the chef in charge of each tier, creating a "four-tiered combination" (shiawase) which sounds like "happiness" (shiawase).

Shark fin, rich in collagen, is simmered in a rich soy sauce broth using traditional techniques from Sichuan Restaurant. Please warm the dish in the bowl before serving.

In 2001, CERULEAN TOWER TOKYU HOTEL was appointed Executive Chef at the time of its opening. Since then, as the general producer of food, he has overseen the entire restaurant, captivating many customers with aggressive and passionate dishes woven with rich sensibility.
In recent years, in addition to contributing to the spread and development of diverse food cultures, he has devoted himself to training internationally recognized chefs and engaging in food education activities for children who will lead the next generation. His achievements have been highly regarded, receiving outstanding recognition from both Japan and France. Even now, he continues to work daily in the kitchen, bringing smiles to guests with gourmet food, while energetically working as an opinion leader representing Japan's food culture.

Nobuto Nagatsuma
Born in November 1970, Aichi.
After graduating from Nagoya Culinary School, he joined NAGOYA TOKYU HOTEL in 1989. He then went to France in 1994 and trained for two years, starting with a two-star restaurant in Bordeaux. After returning to Japan, he worked as a sous chef at a famous restaurant in Tokyo. In 2002, CERULEAN TOWER TOKYU HOTEL continued to travel to France frequently, honing his skills at the three-star restaurant 'Épicure' in Paris and the three-star restaurant 'La Côte Saint-Jacques' in Burgundy. After gaining experience in various cooking sections within CERULEAN TOWER TOKYU HOTEL, he became Chef of 'Coucagno' in 2009, the first head chef of Shibuya Stream EXCEL HOTEL TOKYU in 2018, THE YOKOHAMA BAY HOTEL TOKYU in 2021, and HAKUBA TOKYU HOTEL head chef in 2023. In 2025, he CERULEAN TOWER TOKYU HOTEL succeeded Fukuda as Executive Chef. With the phrase 'Cooking is an art that leaves a lasting impression,' he continues to create memorable dishes that leave a lasting impression on guests, guided by his mentor, Honorary Executive Chef Fukuda, so that customers can experience moments of fulfillment and experience 'beyond deliciousness.'

Born in Tokyo in 1972.
While helping his family and working in the kitchen, he discovered the joy of cooking. Feeling joy when people say it was delicious, he decided to pursue a career as a chef. After graduating high school, he trained at renowned restaurants across the country, including Shiga and Ishikawa. Later, he moved his base to Tokyo and honed his skills at 'Nadaman,' joining THE CAPITOL HOTEL TOKYU when it opened in 2010. He further honed his skills at Japanese Restaurant Suiren. In March 2021, he was appointed head chef at CERULEAN TOWER TOKYU HOTEL Ryotei Cerulean Tower Sukiya. In June of the same year, he was appointed head chef at Japanese Cuisine SAKURAGAOKA. With the spirit of 'learning from the past,' he pursues daily the fusion of the traditions of Japanese cuisine built by predecessors with the evolution of the times. We are committed to pouring the spirit of hospitality into seasonal dishes and delighting our customers.

Born in 1981, Akita.
After graduating from Iwate 's culinary vocational school, he joined Sichuan Restaurant in 2001. That same year, he worked as the opening staff member for the affiliated restaurant 'szechwan restaurant Chen' Shibuya, serving as sous chef before becoming head chef in 2017. Currently, he serves as a lecturer at culinary schools and junior colleges, as well as a judge for competitions, and collaborates with producers and government officials across Japan to propose Chinese cuisine that makes the most of delicious Japanese ingredients. In 2003, he won the bronze prize in the dessert category at the 4th All Japan Chinese Cuisine Competition for Young Chefs, and in 2004 and 2016, he also received gold prizes and the Minister of Agriculture, Forestry and Fisheries Award at the same competition, among many other awards. In 2016, he won the Grand Prix "Red Egg" at Japan's largest chef competition, "RED U-35 (RYORININ's EMERGING DREAM)," which discovers young talent of the new era.

After graduating from a confectionery school in Tokyo, he aspired to become a boulanger (baker) and entered the world of baking. After graduation, he worked at a bakery and joined the company in CERULEAN TOWER TOKYU HOTEL 2001. After training in France, he became a baker chef. Born in Hokkaido, his free and bold sensibility nurtured by the vast land and nature of his hometown forms the foundation of his daily bread-making. "Bread is a living thing. Every day, I engage in dialogue with the ingredients themselves, knead them, shape them, and bake them at the optimal timing. Because it is alive, even the same bread changes in its baking every day. I only serve items I am satisfied with at the store," he shares his dedication. The bread he makes is lively and warm, bringing happiness to those who eat it, earning him many fans.
