Enjoy Shaved Ice at the Hotel

This year, we're introducing two new flavors: "Mixed Berry," a vibrant blend of fruity tartness and gentle sweetness, and "Salted Caramel," a delicious combination of sweetness and saltiness that leaves you wanting more. Along with the ever-popular "Uji Matcha" and the tropical "Mango Coconut," we've created a total of four varieties.
To allow you to fully appreciate the deliciousness of the ingredients themselves, the shaved ice is generously topped with a refined, subtly sweet syrup, and contains ice cream and sauces that add a flavor accent. In addition, the chef's specially prepared syrup comes with extra syrup on the side. You can enjoy the rich flavor by pouring plenty on, or you can use a small amount to enhance the original flavor of the ingredients. Please enjoy the changing flavors while finding your preferred balance.

Shaved ice is served at two locations: the garden lounge 'ZABOU' and Garden Kitchen Caramelo, facing the garden 'Kanza-tei' designed by the monk and world-renowned garden designer Shunmyo Masuno. The finely detailed and lustrous Ajiishi stone steps express waves, representing the traditional Japanese 'dry landscape.' Relax and enjoy a luxurious summer while admiring the cool atmosphere of the lush garden, which has been crafted with this technique.

Mixed berries: 2,900 yen

A vibrant mixed berry shaved ice dessert featuring a rich syrup of sweet and tart raspberries layered with condensed milk. Hidden within the ice is a scoop of vanilla ice cream, and it's finished with a generous amount of mixed berry confiture made with red currants, blackberries, blueberries, and raspberries. Enjoy the refreshing tartness and elegant sweetness of the fruits.


 

Salted Caramel 2,900 yen

This dessert allows you to fully enjoy the profound depth of salt that balances the sweet and fragrant caramel sauce. Rich vanilla ice cream is encased in ice, and layered with light fresh cream and crushed streusel for a delightful texture. The accompanying French Guérande salt further enhances the lingering sweetness.


 

Uji Matcha 2,900 yen

Fluffy shaved ice is generously topped with a chef's special syrup made with high-quality Uji matcha. Inside the ice is hotel-made wasanbon ice cream. Enjoy the delicate flavors and harmony of Japanese ingredients as you combine it with the moist red bean paste, fresh cream, candied chestnuts, and matcha powder toppings.


 

Mango coconut 2,900 yen

A tropical shaved ice with a vibrant, vitamin-filled color that catches your eye. Enjoy it with our homemade mango sauce, packed with refreshing sweetness. Vanilla ice cream and our chef's special coconut milk sauce are mixed into the ice, and the taste changes to a milky, rich flavor as you eat it. Enjoy the summery flavor with the fresh mango and whipped cream toppings.

“Kanza Garden” by Toshiaki Masuno

It was designed as a space that helps you regain the rich sensitivity and flexibility that spring up when you sit quietly in the lobby lounge 'ZABOU' and face the garden with your heart. Stones flow into the lounge like waves washing against the shore, and the marble tsukubai (squat) in the center of the lobby bears fruit. This work is passionately dedicated to enhancing the relationship between exterior and interior spaces, a hallmark of Japanese spatial creation, and enriching the intermediate spaces between them.

After graduating from university, he trained at the head temple Sojiji, continued his creative work in Zen garden design, and has given lectures at various universities and museums both in Japan and abroad. He was the first garden designer to receive the Minister of Education, Culture, Sports, Science and Technology's New Artist Award. He has also received awards from the Minister of Foreign Affairs, the Canadian government, and the Federal Republic of Germany. In 2006, he was selected as one of "100 Japanese People the World Respects" by Newsweek Japan. His works include the garden "Kanzatei" at this hotel, as well as gardens at the Canadian Embassy in Japan, the Berlin Japanese Garden, and the new campus garden at the University of Bergen. He is also active as a writer, with numerous major works including "Zen: A Recommendation for Simple Living" (Mikasa Shobo) and "The Basics of 'Mannerisms' that Create Beautiful People" (Gentosha). In recent years, he has published works such as "Zen Gardens IV: Shunmyo Masuno Works Collection 2018–2023," continuing to disseminate Zen culture and spatial aesthetics both domestically and internationally.
